Producer Background:

The producer Jairo Arcila is a pioneer in coffee fermentation. He is a third-generation coffee producer from Quindío, Colombia. His specialization in pushing and perfecting fermentation techniques has catalyzed the emergence of these processing methods highlighted in our everyday drinking coffees and coffees presented on world competition stages. His two sons Felipe and Carlos are also coffee producers currently making names for themselves in the specialty coffee industry.

Processing info:

The processing method of this microlot combines fermentation techniques with the traditional natural process, bringing to fruition an experimental and clean cup of coffee. Ripe coffee cherries are hand-picked and floated to separate out low-density cherries and foreign debris and then go through a second hand-sorting stage to ensure only the best cherries are used in processing. Then the cherries undergo an aerobic fermentation process for 24 hours. Following this, the cherries are placed into GrainPro bags and undergo an anaerobic fermentation while maintained at 22°C for 50 hours. Once the fermentation stages are complete, the cherries are transferred to raised drying beds and are monitored for uniform drying.
