Producer Background:
Suke Werekata is a village (kebele) in the Uraga district in the Guji region of Ethiopia. Smallholder farmers in this area harvest coffee exclusively by hand and deliver it to the processing station owned and operated by Tracon. This processing station is equipped with the latest coffee processing equipment that cleans and sorts coffees by density, size, and color. In the final stages, the coffees are transferred to a state of the art coffee cleaning and milling facility in Addis Ababa. The Suke Werekata Station is known for its amazing cherry quality and quickly growing its reputation as one of the highest quality producing stations.
Processing info:
Once the cherries arrive at the Suke Werekata Washing Station, they are cleaned and classified by density. The heaviest cherries are selected for this release and placed in fermentation tanks modified to be oxygen-free, where they sit for 72 hours. The cherries are then transferred to raised drying beds for 18 days. Workers routinely rotate the coffee by hand to ensure consistent exposure and drying.
