They live strongly by their traditional culture and rituals and depend heavily on coffee farming to sustain their livelihoods.
Processing info:
The farmers take their hand-picked cherries for the day to an established cherry collection point, where each bag is checked for quality and weighed and in return, they receive payment for their work. Once the cherries are collected, they are washed and separated from any debris and put into fermentation tanks where they will sit for 48 hours. After that time, the cherries are laid out to dry under the sun on raised beds and diligently turned for about 3 weeks until the goal moisture content.
